Cuisine from the Roussillon and Languedoc is famous for its fresh ingredients and wide use of olive oil and tomatoes in its dishes. The sort of food you can expect to eat in Nimes ranges from Catalan snails, pork sausage, and grilled lamb chops (cargolade) to the Camarguais gardiane, which a bull, red wine, and black olive stew.
